Hawaiian Chicken with coconut Jasmine Rice

I found a recipe similar on Pinterest for Hawaiian Chicken with Coconut Rice, this is my twist on it which was a big hit in my house. 

The prep probably took 10 minutes + cooking only took 20 minutes. 

Perfect Chicken Dinner in 20 minutes! That also doesn’t require a ton of cooking skills. 

I didn’t measure but these are close estimates- I always say to measure with your heart 😉

Ingredients:

1 can of pineapple rings

1 can of coconut milk

Jasmine rice

1-2 lbs Chicken breast

1-2 tbsp Soy sauce

6-7 Cloves of  Garlic

1/2 Onion { yellow }

3 tbsp Brown sugar

3 tbsp Honey

1 tbsp Ketchup

3 tbsp Apple cider vinegar

Himalayan salt

Pepper

1 tbsp Canola oil

MARINATE:

Put chicken in container

Dice up onion + garlic { go with your heart on this- I used about 6 cloves+ }  and throw on top

Drizzle honey over the top + then ketchup

Sprinkle brown sugar, Himalayan salt + pepper

Pour canola oil, apple cider vinegar and can with the pineapple rounds into the container

Shake periodically over several hours.

Drain the juice and throw everything { including pineapple rounds, onion + garlic } in a fry pan/or grill  – cook throughly

RICE:

While chicken is cooking start the rice-

Follow rice to water ratio on the package replacing the water with coconut milk- cook as normal.

This is my favorite way to make rice now. And would also be an amazing served with mangoes! 

Serve together with your favorite veggie or alone + enjoy. 

We love pairing it with asparagus or zucchini.
